Green Bean Salad

453 grms (1 Lb) Green Beans
30 Ml (2Tbsp) EG Oil
15 Ml (1 Tbsp) Dijon Mustard
60 Ml ( 1/4 cup )Diced Red Pepper
1 Medium Sausage. In this case I used mild Italian. Any will do.
118 Ml (1/2 Cup) White Onion small dice
15 Ml (1 Tbsp) Bourbon Garlic Marmalade (optional)


Cut ends off the green beans cut into 1 inch pieces. Cook in boiling water until done. about 10 minutes.

remove and drain.  Place into cold water with ice to stop the cooking process. Remove  the beans that  have cooled down, I would a strainer in this case.  Mix the wet ingredients together until smooth, add in  the remaining ingredients, put into the refrigerator for 2 hours prior to service.

Can be made the day before.

Marmalade can be mixed in with the wet ingredients.
