Smoked and BBQ Baby Back Ribs

Ingredients

Step one:
1/4 cup minced cooking onion
4 Tbsp Everything Garlic
1 tsp Himalayan Salt

Step 2: Cajun Seasoning
2 1/2 Tsp Paprika
1 Tsp Salt
2 Tsp Garlic Powder
1 Tsp Onion Powder
1 1/4 Tsp Dried Oregano: Fresh can be used as well, must use the spice right away as it will clump up
1 1/4 Tsp dried Thyme Again fresh can be used
1 Tsp Ground Black Pepper

For the spice I like to make the recipe 4x’s the amount. That way you always have it.

Step 3: Braising

1 Large Pan/ Baking Sheet that you no longer wish to use in the kitchen. Some people use a small roasting pan.

1 1/2 cups water
TinFoil to cover the pan

Directions

Smoker:

Pre-Heat smoker 270F for an hour, (Bradley Smoker), for 1 hour, prior to putting the ribs in. Place the Ribs in the smoker with your choice of chips, in this case I Used Applewood, smoke the ribs for 1 hour.

Take the ribs out and while they’re hot add the Cajun spice, I like to wrap them in saran wrap, it helps the rub adhere to the ribs.

BBQ:

Turn on the BBQ while the spice is adhering to the Ribs. Get it nice and hot.

Place ribs on a tray with water, cover and turn off the outside burners, leaving the middle ones on, Turn down to a medium temp.  This helps with the cooking, doesn’t become so hot. Just a nice even temperature is good.

Braise for 45 Minutes take out of the tray  and put on the BBQ, use your choice of sauce any will do.  ENJOY!!

 

If you don’t have a smoker, you can use liquid smoke or smoked paprika, both can be found in a grocery store.

just omit the smoking and follow the rest of the recipe .
